An unresolved bit of the jigsaw is what happened to Richard after his trip to Scotland.
A probable family in St Peter in Thanet would be
Baptisms Register, Saint Peters Thanet, Kent (Ancestry transcript), "4 Oct 1772, Eliz Mockett, father Rich Mockett, mother Mary."
Baptisms Register, St Peter in Thanet, Kent (FamilySearch transcript), "2 Oct 1774, Wm Goodwin Mockett, father Rich Mockett, mother Mary."
Parish Registers, Canterbury, Kent (FamilySearch transcript), Baptism, St Peter in Thanet, "Mary Mockett, b. 30 Jun 1776, bp. 25 Aug 1776, father Richard Mockett, mother Mary."
Baptisms Register, St Peter in Thanet, Kent (FamilySearch transcript), "29 Jul 1787, Jonathan Mockett, father Richd. Mockett, mother Mary."
There was also this in Dover: Baptisms Register, Saint Mary The Virgin, Dover, Kent (Ancestry transcript), "16 Sep 1781, Richard Mockett, father Richard Mockett, mother Mary."
I haven't checked this any further, other than to say that I have not found the marriage record of Richard & Mary.
From our researches so far, I don't see another candidate for the above Richard.
There was another Richard M, of Deal, Kent, who was about the same age. He was bp Deal 20 Dec 1741 s of Richard & Mary (yet another Richard & Mary). He m. in Deal, 29 Apr 1771, Martha Inward.

I have found a second Richard Mockett born in St Peter's. So we have:
(R1) 22 Jul 1745 the brother of Sampson - parents Sampson and Mary
(R2) 11 Aug 1748 the son of Jonathan and Mary.
The family of Richard and Mary that you found (above), had sons Jonathan and William. (R2) had brothers with the same names.
There is only one burial for Richard Mockett. This is on 26 Oct 1826 aged 80. (R1) was aged 81y3m (R2) was 78y2m.
Given the "disappearance" of Sampson Mockett, his wife and children, I am inclined to believe that Richard Mockett also "disappeared", and the family that you found, and the single burial are (R2).

Good sleuthing! R2 would be the son of Jonathan M & Mary Fatham, see https://www.sackettfamily.info/g114/p114928.htm . I'll amend my records. R2 would also be the apprentice shipwright in 1765. I wasn't happy with assigning that event to R1 as he would have been about 20. Makes more sense to be apprenticed at about 16.

So using the same logic... Sampson Mockett being an apprentice carpenter aged 22 in 1766 is equally unlikely. Especially as Captain Sampson Mockett got married in Scotland later the same year. Perhaps the apprentice was the 19 year old Sampson Mockett who died in 1771?

Yes, agreed. Apprentice carpenter doesn't fit with shipmaster, and the age was problematic. Almost certainly the carpenter was the one who d aged 19.
